Veg Curry o’clock

Ignore the take-away apps this weekend and save a bit of money by making your own curry! You need just five ingredients to whip up this tasty veggie sensation in no time at all!

Ingredients:

  • 1 large butternut squash- chopped into medium sized chunks
  • 1 pepper (we recommend the red one)
  • 2 tablespoons madras curry paste
  • 400g can coconut milk
  • Small bunch of coriander, chopped

How you do it:

  1. Heat a large flying pan, spoon in the curry paste and fry for one minute. Add the pepper (preferably red) and squash, then toss well.
  2. Poor in the coconut milk with 200ml of water. Bring to simmer.
  3. Cook for fifteen minutes until the butternut squash is juicy and tender and the sauce is thick.
  4. Finish with coriander (it looks pretty and tastes pretty good too!)

Our tips:

Have fun with it! If you have some chickpeas in the cupboard why not chuck them in too? Remember that when it comes to cooking-rules are for breaking! You can even put in meat if you aren’t feeling vegcrazy.. We don’t think you need to though!
