Odds and Ends Frittata

Ingredients

  • Oil or butter
  • Onion
  • Pancetta
  • 6 large, fresh, free range eggs.
  • A handful of cheese (a good, strong mature cheddar is a good idea!)
  • Splash of milk
  • Chopped red peppers
  • Torn spinach
  • Chopped courgettes
  • Salt and pepper

And then…

  1. Preheat your oven to 200°c.
  2. Heat up the oil or butter in a pan on the hob. Heat up the pancetta until it starts to crisp. Then, add the onions and cook until golden.
  3. Line a 9 inch tin with parchment paper.
  4. In a jug, whisk together the eggs, cheese milk, red peppers, spinach, chopped courgettes and seasonings. Pour into the pan.
  5. Bake until golden and puddy, and the centre feels firm and springy. It takes around 25 Italian minutes.
  6. Enjoy your frittata!

Top Tips:

A frittata is actually an Italian dish but looks like a Spanish omelette or a quiche (without the crust!). It’s great for leftovers so it can be very cheap and quick to make.

You can have it for breakfast or dinner, and eat it hot or cold – so you could even take it to uni for your lunch! It’s a great substitute for a sandwich and is great to have in the fridge for when you need to fill a hole after a long night of partying.

This recipe calls for it to be cooked on the hob, and then baked in the oven. However, if you don’t want to use the pancetta or onion you can leave out the first step and oven bake it in a round tin (as theoretically that’s the right way!). Or, if you’re having a party for the masses you could use a roasting tin but just bear in mind that obviously you will then need a lot more ingredients! So versatile.
