This recipe will make 4 people very happy!
Ingredients:
For the BBQ sauce (measurements according to taste):
- Worcestershire sauce
- Tomato sauce
- Salt and pepper
- English Mustard
- Sugar and tobacco
For the chicken:
- 4 medium, boneless, skinless chicken breasts
- 8 foil sheets (2 per chicken breast – you need enough to wrap around each breast)
- 1 thinly sliced courgette
- 1 red onion cut into thin strips
- 1 ‘posh’ asparagus spear
- Salt and freshly ground pepper
- Olive oil
The Method
- For the BBQ sauce: Making your own BBQ sauce is easy and delicious, and will take only a few minutes to make.
- Whisk together the tomato sauce, worcestershire sauce, salt and pepper, English mustard, sugar and tobacco.
- Marinade the chicken in the sauce for about 15 minutes, or better still, overnight in the fridge.
- Then, pre-heat the grill to a medium high heat.
- Make 4 pretty foil parcels – place one chicken breast on each pair of foil sheets, season with salt and freshly ground pepper.
- Brush each chicken breast with your homemade BBQ sauce.
- Arrange vegetables around each chicken breast, season.
- Drizzle chicken and vegetables with olive oil.
- Fold the sides of the foil over the chicken, cover, and seal parcels.
- Grill for 35 minutes. Turn once, check that the chicken is cooked through and let it rest.

- Worcestershire sauce is a must for as student’s fridge. It lasts a very long time, has an intense flavour and has many uses. It’s one of those things that you’ve heard of but have no idea what it is or what it is used for. Well… it is used in Bloody Mary’s, salads, and is a punchy meat marinade. Also good with steak, crab cakes, seafood cocktail sauce, burgers, pulled pork, pies and soups.

Run a lime wedge around the rim of a tall glass and turn upside down and rub the rim into a course sea salt. Add ice. Then mix separately the Vodka, Worcestershire sauce, Tabasco, lemon juice, celery salt and salt. Add to a tall glass and decorate with a stick of celery.
