Chicken Drumsticks & Vegetables

Ingredients

  • 2 tablespoons olive oil
  • Salt and pepper
  • 6 small red potatoes cut into chunks
  • 3 carrots cut into chunks
  • 1 red onion chunks
  • 2 cloves of garlic, sliced
  • 8 large chicken drumsticks
  • Dry white wine
  • Dollop heavy cream
  • 1 tablespoon flour
  • 1 tablespoon dijon mustard
  • Fresh tarragon

How we do it!

  1. Heat your oven to 230°c.
  2. Toss oil, salt and pepper with potatoes, carrots, onions, garlic and lemon in a large roasting pan.
  3. Rub chicken with more oil, salt, and pepper. Arrange on top of the veggies in the pan.
  4. Pour on the wine and bake at 230°c for 45 to 50 minutes or until chicken is done and golden.
  5. Remove chicken and keep warm.
  6. In a small bowl, stir together cream, flour and mustard until very smooth.
  7. Stir into drippings in the pan with the vegetables and some tarragon.
  8. Bake for 5 to 8 more minutes, stirring once, until thickened.
  9. Serve chicken with vegetables and sprinkle with additional chopped tarragon.
