One Pot Pasta!

Serves 6

Ingredients

  • 1 litre of vegetable stock (1l boiling water and 1 veg stock cube)
  • 2 tablespoon virgin olive oil
  • Pack of spaghetti
  • Frozen chopped spinach
  • 1 can chopped tomatoes
  • 3 garlic cloves, thinly sliced
  • 1 onion, sliced
  • Pinch of dried basil
  • Pinch of dried oregano
  • ¼ teaspoon of dried red pepper flakes
  • One Pot Pasta!
  • Black pepper
  • Shaved parmesan cheese

The method

This one pot recipe is particularly easy, as all the ingredients can be cooked together at the same time.

  1. Bring a litre of vegetable stock to the boil. It is important that you break the spaghetti in half and add to the boiling stock. Then, add the canned tomatoes with all of their juices. Heat on high for a few minutes. Then, add the virgin olive oil, the thinly sliced garlic, the sliced onion, the dried herbs and the dried red pepper flakes. Finish with a shake of freshly milled black pepper.
  2. Make sure all the ingredients are immersed in the liquid – otherwise cooking will be uneven. Put a lid on it, and bring to the boil. Then, turn it down to a medium heat, without a lid for 10-12 minutes. Stir now and again.
  3. Check that the pasta is nearly cooked and that the liquid has been soaked up. At this point, add the frozen spinach and stir. Remove from the heat when the pasta is cooked.
  4. Just before serving, sprinkle with freshly shaved parmesan. Bon appetit!

  • For students, one pot cooking is an excellent way to prepare food. It is convenient and very nutritious, and having all the ingredients in the same pot means that the flavours are blended, and yet the individual items still retain their own flavour and texture.
  • Cooking everything together in one pot is particularly good for rice and pasta, as these ingredients are perfect for absorbing and soaking up the juices. A perfect example is the classic paella.
  • In one pot cooking, timing is critical, and it is important to avoid the trap of just shoving everything in, in one go.
  • The idea is that all the items in the dish are just cooked to perfection, retain their original quality and all flavours are enhanced.
  • This is a wonderful way to make a simple, convenient, tasty and healthy meal in one pot in a very short amount of time. It also saves on the washing up!
