In this recipe, I’ve used Panko as it is a great alternative to your normal breadcrumbs. It is an interesting alternative, and let’s face it… we all want to look a little interesting sometimes! Panko breadcrumbs are Japanese and you can normally find them in the bread aisle. They are especially crunchy and have a crispness about them.
Panko is also great with roasted vegetables…especially cauliflower, which I love, but can be quite bland sometimes.
What’s great about this dish is that it is very tasty and great for entertaining, or when you need a warm and hearty dish at the end of a hard day. It is satisfying, warming and great for eating up stuff in the fridge. The thing you have to remember is to buy pre-cooked chicken and lightly cook the vegetables beforehand.
It’s always a good idea to have pancetta in the fridge. Pancetta is normally sold in small packs and tends to have a relatively long shelf life of up to a month. When you are shopping, always check the use by date… so, make pancetta part of your fridge shopping. It is so handy for all sorts of dishes.
