‘After A Good Night Out’ Breakfast

This is the ideal breakfast for the morning after the night before, for 6 people.

It takes 5 minutes preparation time, and 45 minutes to cook.

Ingredients:

  • 100g of small baby potatoes (cut them in half if they’re biggish)
  • 3 tablespoons of olive oil
  • 250g black pudding slices
  • 12 rashers of streaky bacon
  • 200g small vine tomatoes (this is around one pack!)
  • 250g smallish mushrooms (again this is around one pack)
  • Chopped flat leaf parsley – add as much as you like (it also adds a bit of green and looks good and healthy)

Right! Here is what you do:

  1. Start by heating the oven to fan 180°c
  2. Find a good sized baking tray and lay out the ingredients evenly across the bottom
  3. The first step is to put the potatoes on to the tray and sprinkle with half of the oil. Try and get the potatoes all the same size. If they look a bit big, cut them into halves. It means they will all take the same cooking time!
  4. When the oven is nice and hot, bung the baking tray into the oven and roast for about 20 minutes.
  5. The next step is to add the mushrooms. Make sure they are washed and dried. If they are wet they won’t roast properly. Then, slice the black pudding and add to the tray.
  6. Next, add the bacon and the tomatoes.
  7. Then, add the rest of the oil and season with black pepper. (Try and invest in a pepper mill. Freshly ground black pepper is a must for most dishes).
  8. Roast for 25 minutes and garnish with parsley.
  9. Then, crack 6 eggs into the tray and bake for the last 6-8 minutes of cooking.

Our top tips!

  • If you want crispy bacon, put it in a little earlier.
  • If you are all starving, you can also add sausages at the first stage.
