Posh Roasted Sausages

Ingredients

  • 2 medium sweet potatoes
  • 1 onion
  • 2 cloves garlic
  • 4 sprigs fresh thyme or dried equivalent
  • Salt and pepper
  • Dash of olive oil
  • 8 fresh pork sausages
  • Can of chicken broth, or improvise with a cube
  • Bunch of hearty greens
  • Can of cannellini beans
  • 1 tablespoon red wine vinegar
  • Baguette (we recommend garlic and herb…!)

This is how it’s done:

  1. Heat the oven to 230°. Toss the first lot of the ingredients together in a large roasting tin, in a single layer.
  2. Place the sausages on top of the vegetables. Bake for 20 minutes.
  3. Remove pan and stir in broth and greens, beans and vinegar.
  4. Bake for 10 more minutes or until sausages are browned and potatoes are tender.
  5. Add bread to the oven during the last 8 minutes of cooking time, and bake until toasted.
  6. Serve your posh sausages!
