Ingredients
- 2 medium sweet potatoes
- 1 onion
- 2 cloves garlic
- 4 sprigs fresh thyme or dried equivalent
- Salt and pepper
- Dash of olive oil
- 8 fresh pork sausages
- Can of chicken broth, or improvise with a cube
- Bunch of hearty greens
- Can of cannellini beans
- 1 tablespoon red wine vinegar
- Baguette (we recommend garlic and herb…!)
This is how it’s done:
- Heat the oven to 230°. Toss the first lot of the ingredients together in a large roasting tin, in a single layer.
- Place the sausages on top of the vegetables. Bake for 20 minutes.
- Remove pan and stir in broth and greens, beans and vinegar.
- Bake for 10 more minutes or until sausages are browned and potatoes are tender.
- Add bread to the oven during the last 8 minutes of cooking time, and bake until toasted.
- Serve your posh sausages!
